Food Network Star Predicts Vegetarian Food Craze

When Food Network chef Giada De Laurentiis asked her viewers what they'd like her to cook, they overwhelmingly requested more vegetarian meals. In fact, De Laurentiis predicts vegetarian meals will be the hot trend in 2012, and in preparation, she's been testing a variety of mouthwatering vegetarian concoctions. She says in a Food Network video that when her mother went vegetarian, "I sort of made it my mission to start coming up with dishes that wouldn't make you miss the meat." In the video, De Laurentiis shares her recipes for delectable dishes, including a zesty vegan curry bean dip:

To help get her creative juices flowing for developing more vegetarian delights, PETA sent De Laurentiis a copy of The Conscious Cook by vegan chef Tal Ronnen, who has cooked for the likes of Oprah and Ellen DeGeneres. The book is a wealth of information about delicious, versatile, and protein-rich faux meats that can be the basis for healthy plant-based meals.

She certainly does....just radiant and healthy and glowing. I hope that everyone will think about embracing vegetables, nuts, fruits, grains, legumes and all sorts of good for you stuff, and slowly replace meat with those foods.. At one time I thought it was impossible to not eat meat, but I am getting more comfortable with it, now that I have made my mind up to it. Now when my roomy makes us a meal and there is meat included in the menu, I just don't eat the meat instead I just stirfry some onions, green peppers, mushrooms, sliced zuchini and some tofu sometimes...and it makes a great replacement for meat. The mushrooms have kind of like the texture of eating meat, and I put a few drops of BBQ sauce in the pan for the frying of them instead of oil. It comes out just scrumpteous......It will never make me look like Giada though....oh well at least I will have improved my health.

Well Giada De Laurentiis is living proof as she looks very healthy
