Mango is my favorite fruit in this whole world so when I found this recipe for gluten free mango cake thought I'd share it with you. I haven't made it yet but I fully intend to. :)

Vegan Mango Cake (It's Gluten-Free!)

Vegan Mango Cake (Gluten-Free) Prep Time: 25 mins
Cook time: 55 mins
Serves: 8 slices


  • 1 ½ cups of brown rice flour
  • 2 cups of fresh mango, peeled and pureed (about 4 medium mangoes)
  • 2 tsp of baking powder
  • ½ tsp cardamom powder
  • ¼ cup of grapeseed oil
  • ½ cup granulated sugar
  • 1 tsp vanilla
  • ½ tsp sea salt
  • Coconut oil (to great the baking sheet)


Preheat the oven at 350F.

Peel and cut the mangoes and add the pulp to a blender until smooth.

In a medium bowl, sift together the flour, baking powder and sea salt. Add the cardamom and mix with a fork.

In a separate bowl, add the mango puree, oil, vanilla and sugar and whisk until smooth.

Add the flour mix to the mango puree mix slowly, while mixing gently. Do not over-mix.

Great the cake sheet with coconut oil and pour the batter into it, while smoothing the top.

Bake for 45 to 50 minutes or until a knife inserted in the center comes out clean. Adjust according to your oven.

Let it cool for an hour at room temperature. When the sides of the cake separate from the baking sheet, your cake is ready.

Dust with powdered sugar (optional) and garnish with fresh mango on top. Enjoy!

Feather, I truly hope this is the wave of the future. The Steiner schools have the right idea. Children should at least be given a choice of what to eat and no matter what it is it should be healthy. I once went and ate lunch with my kids at school and after that I always made and sent their lunches with them...that school food was not fit to feed cats or dogs let alone our children.

Michelle Obama and been trying for 5 years to get schools to offer more nutritious foods for our children but people like Sarah Palin and most rightwingers have attacked her for it saying she's trying to tell us how to eat...well, someone needs to! Why would you not want kids to eat healthy foods? I always had fresh fruit and vegetables for my children to eat if they wanted.

Anyway, the Steiner and Muse schools are a step in the right direction.

Here's a story I think you're all going to love...I'm so amazed!

(TRFW News) What if there was a school that encouraged caring, reflecting, believing, achieving, doing, and playing all while LEARNING?  A place where children not only have teachers but mentors.  And children have a choice AND a voice in their education.  There is now a school in California that does all this and more.  It’s called The Muse School.  Learning is alive.  Interconnections are critical.  Sustainability is key.  The Muse School embraces change and is ever-evolving.  Sounds like a Utopia, doesn’t it?  Well, for this school – it’s REALITY!

The Muse School is the first school in the country to go vegan.

Not only that but students and teachers are actually growing their own fruits, veggies, and herbs to  create their own meals. (1)  The Muse School is made up of Elementary, Middle, and High School Students and was founded by the wife and sister-in-law of filmmaker James Cameron.  Currently the school serves 1 vegan meal each and every week and by 2015 they are planning to fully convert all school meals to vegan.  They’ve said this isn’t to push veganism on kids – but to reduce their carbon footprint, (2) teach children to be environmental leaders, and help spread the love of animals.  Their meals are not only well-rounded but some say gourmet.  The school’s “Edible Schoolyard Project” and “Seed-to-Table” style of learning gives children the opportunity to make good choices about food, their health, and the environment.  On the school campus you will find greenhouses, gardens, and a teaching kitchen.

This summer they will be increasing their growing space so that they will have over 100 gardens on school grounds.

The Muse School has been environmentally conscience since the beginning – in their building, design, materials, and practices.  They will be celebrating their 10 year Anniversary in 2015.  They even state on their site ” Sustainability – Green in Principle – Through Practice – and By Design.” (3)

The Muse School seems truly amazing and one to really push the envelope.  I, for one, can’t want to see what this school does next!

Quick & Easy Vegan Praline Ice Cream With Chocolate Sauce

Serves 1

Ingredients for Ice Cream

  • 1 & 1/2 frozen banana
  • 1 big Tbsp. almond butter
  • 1/4 cup of your favorite milk
  • Pinch cinnamon

Ingredients for Chocolate Sauce

  • 1 fresh banana
  • 1 Tbsp. cacao powder
  • 1/2 cup of your fav milk
  • Directions

For each (ice cream and chocolate sauce), blend all ingredients in your high speed blender until smooth. Serve your ice cream in a nice little bowl and pour the chocolate sauce on top.

Garnish with your favorite toppings. Here I've used some mulberries and cinnamon.

Perfect On-The-Go Meal: Vegan Peanut Butter & Grape Wrap

Wraps are the ideal on-the-go meal because you can put practically anything in them. Wrap them around fruit and peanut butter and they can be called breakfast ... or roll them for dinner and they are a quick portable picnic to bring onto the patio, atop the roof, or out to a park bench.

Perfect Weekday Snack: Vegan Peanut Butter & Grape Wrap

makes 1 wrap

PREP TIME: 15 minutes

  • 2 or 3 Tbsp. peanut butter (or nut butter of your choice)
  • 1 large whole wheat tortilla or other sandwich wrap
  • 8 grapes, red or green, finely chopped
  • A squeeze of orange or lemon juice
  • 1 small banana


Spread the peanut butter onto the bottom half of the tortilla in the shape of a large rectangle. Press the grapes evenly into the peanut butter.

Squeeze a little citrus juice over the banana. Nestle the banana into the peanut butter at the bottom of the tortilla (you might need to take a bite of the banana so it fits).

Tightly roll up the wrap, folding in the left and right sides like a burrito.

Wrap the roll in wax paper or foil. Slip it into your lunch box or knapsack.
